Yummy VEGGIE MELT for 2




INGREDIENTS

1/2 Red Onion - diced
small Green Pepper- diced
1 Zucchini- diced
1 ripe Avocado
1 Tbsp Basil Paste
1/2 Tsp Rosemary
2-3 Tbsp Extra Virgin Olive Oil
4  slices of American Cheese
4 slices Whole Grain Bread of your choice
butter

DIRECTIONS 

 STEP 1- dice Onion and Green Pepper. Place in saute pan with 2 tbsp Olive Oil. saute about 5 minutes on med-high
 STEP 2- chop Zucchini
 STEP 3- Add Basil and stir
 STEP 4-Add Zucchini and stir. (Add more Olive Oil as needed)
 STEP 5-Add Rosemary and stir
 STEP 6- Butter all 4 slices of Bread (on one side only)
 STEP 7- Put on heated griddle and add Cheese
 STEP 8- slice Avocado and divide into 2 groups
 STEP 9-  Grill Bread until golden brown but do not burn
 STEP 10-Add 1 cup of sauteed mixture to 2 of the slices of Bread
 STEP 11- Lay half the Avocado on top of one mixture and the other half Avocado on the other mixture
STEP 12- Lay the other bread on top and cut in half.  ENJOY...YUM

You can!!! CANNING Homemade Applesauce

they say you can't teach an old dog, new tricks! But, turns out you can. Last night, Don and I taught each other how to can our homemade applesauce. It wasn't exactly a smooth experience but now that we've done it once, it should be a breeze next time.
